Pepper jack if I am just eating slices of cheese, Motz if I am putting it on a sandwich or pizza or something like that. Pretty much any cheese is a cheese I like. Except I am not big on aged cheese. I know those are supposed to be the fancy good cheese, I just don't like them. Also, blue cheese is mold, it's not a cheese.
 
No to imitation cheese (this means you, Velveeta), but most every other kind is great.

I especially love a veiny blue cheese with a great piece of bread and a nice Cabernet. Have eaten it in many countries, but you know the best Bleu anywhere ever?

How do you pick just one? We have an entire drawer in the fridge dedicated to cheese only.

We usually keep on hand various forms of mozz, Colby Jack, cheddar, cream, parm and American with some doses of others. Currently those others are smoked Colby, smoked provolone and some fontina.
 
It's hard for me to find a cheese I don't like. I did in Paris, but domestically, get in my belly.

Yeah, I would fairly regularly stop by the retail store and buy a 2 lb wheel for $20. Last time I stopped there, they wanted $60+. I passed.
