Random Thoughts 15: Crystal Clear 2021 Edition

My mom made this when I was little, so tasty, I didn't know anyone outside of my family did stuffed peppers. Maybe it's a Chicago thing?

1st time I've ever made them, these peppers were huge and I just thought stuffing them made sense. I just winged this with no recipe, but it turned out darn good.

My mom made stuffed peppers in a way that sounds similar to what BC described.
I could see doing what you did, Stuff with a combo of Mexican rice and taco meat. Then top it off like you did.

For taco meat I would think red bell peppers would be best, or maybe even orange or yellow.

You got me thinking that taking strips of round steak with sautéed onions in fajita spicing and stuffing green peppers would be good.

May have to try that Wednesday. Will be in Ralston tomorrow I think.

Well after a good lunch I just rolled with eggs and sausage for supper tonight. Had a meeting and just cooked them up quick after I got back from it.

Yes! Before going to bed last night checked the rain gauge and the rain we got last night hardly registered. After the storm that blew through this morning we have to have gotten a significant amount. I'm glad I had a little faith and shut off the sprinkler this morning when it started about half an hour before we were supposed to get wet.

About an inch spread out over three hours, so not too bad. I had checked yesterday and for the summer were were down 50% from normal or over 6" low on the rain dipstick.


Edit: Still all dark and rainy. Might be a good morning for a chair nap. ;)

Wow, turned dark like its near nightime here, then winds are about blowing things over and now a huge downpour. Getting very wet.

How is soccer going so far this year?
Just got the HS teams put together for the fall season last week. JV and Varsity teams went to Duluth like they normally do to play some games/scrimmages. Both went undefeated and gave up only one goal combined. Granted some of the competition was suspect. Should have some solid teams at all levels (V, JV, B and Freshman). I was talking to the goal keeper coach last night and he feels like they have two keepers (junior and sophomore) who will both push their returning V keeper (junior). They have 6 solid keepers for 4 teams; an unheard of embarrassment of riches.

Daughter was happy to make the JV team. She played pretty much the whole game each of the games in Duluth; starting at center back. She only came out long enough for the coach to move her up to forward when they called the dogs off in one of the lopsided games.

Conference is going to be interesting this year. So many schools not able to field a full complement of teams. :( Pirates only have a varsity this year. Other schools missing one or more of JV, B or freshman teams. Their school on the other hand had over 80 girls tryout this year.

She was excited to get invited by the assistant V coach to play with the varsity for the alumni game later this week. Several of the seniors on the varsity will play with the alumni so they need to fill some spots.

As far as club goes, after three really frustrating years which made daughter start to wonder if she should just hang it up, she made a totally different team at a new club that is at a high competition level. She only really knows a couple of girls on the team so if feels like a fresh start for her. It's nice to see her excited about soccer again.

Not at all. It's exciting to hear. One of my daughter's best friends made the JV team. She's very excited as only a few of the 10th grade girls did. Is the assistant V coach Ms. W?

Yep. Daughter loves her.

As far as 10th graders, she knows CH, SL and MV but she doesn't really know VV or JC.

Ms. W is awesome. She's actually part of the group that I play basketball with during the school year. She's got a great sense of humor. Both of my older kids had her as a teacher and she was their favorite teacher while they were in her class. VV is my daughter's friend. She's a really nice and fun girl but she can be a bit direct in her communications. If your daughter wants to strike up a conversation with her, she can ask about her new puppy.

Texted my cousin in Strawbeerry Point to message me if I need to come down and dig him out of the rubble of his house. My way of saying "Heads up, dude, weather coming your way!" He checked the weather and was "Oh, ****!"
