Wanted to see if people would be able to explain this to me. Was reading some posts about people going to the championship game and some seemed very against this restaurant. I’m curious why that was as I’ve now been twice and enjoyed both times.

We went there for the first time a couple of years ago while in Houston and all really enjoyed it. We also ate there after the game Saturday before driving back to Iowa. This time wasn’t as good but we were also there at like 3:30 in the afternoon. Even then I still enjoyed the food.

What is the reason for people saying to avoid going here? Is it just because it is a chain? I also just get sausage so maybe it isn’t as good with other types of meat. Just wanting to understand what I’m missing.

I don't know about this restaurant, but this type of talk is typical in the BBQ world. Go to a KC message board and ask them good places. People also tend to hate on places that become popular or build more locations. Jack Stack and Joe's in KC are two examples. It's the same in the beer world, people root for the underdog.

Wife and I went to a spring creek BBQ next to our hotel in Dallas. She took one look and turned around and said she wasn’t eating in that dump.

Spring Creek has closed multiple location in the DFW area due to lack of business.

Best BBQ places in DFW, by far, are the mom and pops with a single location. I am aware of one of them who opened up a 2nd location and closed it within 12 months for a variety of reasons, primarily the reduction in food/service quality.
I’m sure there are better places but I’ve liked it when we have gone. I think for me part of the reason is I don’t ever do stuff like brisket or those types. I’m going to stick to a sausage generally. Maybe that is my problem is I just normally don’t do barbecue.

I haven't heard that much hate aimed at Joe's, but it's still one of my favorites, so I'd probably ignore it if I did. But, I absolutely prefer the original gas station location versus the newer ones. I think their equipment is seasoned better and produces better quality.

For me barbecue is more about the food and the community aspect. I like places that feel like you could be eating in someone's backyard. I'd rather eat barbecue at a picnic table or at a long table where I could be seated next to someone I don't know versus tucked away in a private booth. If the exterior looks too nice, I think they spend more time on the exterior than the food. I've never tried Spring Creek, but the exterior looks like they could have taken over a Granite City or a Chiles, so it's not something that I would pick based on first glance. Maybe I'm snobbish by a place looking too nice if that's a thing.

I've eaten at various chain barbecues over the years (Famous Dave's, Dickey's, Tops, etc) and while the food is still decent, they tend to lose something once they get too big. They save money on various aspects or ingredients and it usually manifests itself in the flavor falling off. Give me a shack where I can see smoke billowing out of the smokers in the back, a stack of wood nearby, and some floors that are a little stickier than you're normally prefer.

You might be right. Stopped in Stillwater to get gas and the place had that great smoked meat aroma … hit the men’s room and it was the most disgusting sight I’ve ever seen. Ran out and lathered up with some Purell.

Anyone go to Babb Brothers BBQ when they were in Dallas?

I went to one roughly 5 years ago in between Lawrence and Manhattan on the way to a KState game.
Nice place, nice people. I think that one has since closed.

Barbecue is all about the skill of your pitmaster. It's a difficult thing to franchise, the best ones do more than a dozen things you can't write down for someone to imitate. In order to open more locations, you're obviously going to need to dumb down some of the meat work. A true mom and pop with a great local reputation is where you want to go.

TBF, Jack Stack is good but overpriced. Joes and Q39 are the kings in KC. LC's is the best. Gates and Bryant's don't deserve being considered part of the big 4

We have one in Arlington that is really good. The one in Grand Prairie less than 10 miles away is terrible.

I eat at their Trinty Groves location on occasion and its really good

Big fan of these + Slaps + Char Bar + Wolfpack
Char Bar is the best brunch spot. Brisket and eggs can't be beat on a Sunday walk to Weatport after watching an ISU win at Kelly's the night before

Spring Creek = Dickey’s BBQ = Rudy’s BBQ

It’s fine but going to a BBQ chain in DFW is like going to Red Lobster when in Portland Maine and there’s amazing Lobster Roll shops everywhere.
