Yes he was quarantining due to exposure to the virus but he did test negative twice. I'm sure he'll be back in the booth next week.
The CDC says you should isolate for 14 days after having close contact with someone that has covid. When was he exposed?

Surprised we haven’t seen an official announcement yet (it is listed as 6:30 ABC on the Big 12 website, so maybe that is the announcement or I missed it somewhere else).

Not sure how far you read in that article, but a few paragraphs in makes it clear that either crew can do Saturday night on ESPN or ABC. Also, I’m pretty sure Herbstreit said during Miami and FSU last night they would be doing Georgia and Auburn.
Sounds like you're right. It will be McDonough, Blackledge and McShay.

They just interviewed Chris Fowler on ESPNU radio and it sounded like he is on the call this weekend for ISU-OU and previewed it. Not sure where some posters on here on their info that they were doing the ESPN game instead.

That makes sense to me but I wonder why Fowler didn't correct the hosts when they said "you have Iowa State and OU this weekend, you probably haven't done your full analysis on the game yet but can you give us a preview?" and he previewed it as if he was calling it.
