    Salsa Recipes

    Wanting to make some fresh salsa today, anyone have some good recipes? I don't mind a little kick to it either, just something not too hot in flavor though.

    Here's a recipe that I use regularly.

    1 bag of Baked Tostitos Scoops
    1 jar of Iowa's own Kramer's Medium Salsa
    1 serving bowl
    1 Grain Belt Premium
    1 lawn chair

    Here's a really simple recipe that is hard to mess up.

    1 medium/large tomato - peeled and diced
    2 cloves of garlic - minced
    1 onion - chopped
    1 jalapeno pepper - seeds removed and diced
    1 lime - juiced
    1 bunch of cilantro - finely chopped
    salt and pepper to taste.

    Combine all ingredients in a bowl and enjoy.

    I like this recipe because it's not heavy on the tomato. too many salsas go way overboard on tomatos and you end up with basically spicy ketchup.

    For variation, I have included different kinds of peppers, pineapple, whole kernel corn, etc.

    4 large tomatoes diced
    1 small onion diced
    1 jalapeno diced
    1 garlic clove diced
    1 lemon - juiced
    1 bunch of cilantro - finely chopped
    1/2 cup of black beans
    1/4 cup of sweet corn

    I just made a fresh batch of black bean and corn salsa. Yummy. You will get applause for this one! It's great with chips or just as a side with about anything.

    Ingredients:

    2 15.5 oz cans of black beans
    1 11 oz can mexican corn with grn & red peppers
    7 oz can of chopped green chilis
    1 med onion chopped fine
    2 jalapena's chopped fine
    6 cloves garlic, chopped fine
    2 Tablespoons fresh cilantro chopped fine
    2 very ripe avacodos chopped in small chunks
    2 medium tomatoes seeded and diced into fairly small chunks
    12 good cranks on the pepper mill
    celery salt and salt to taste
    Juice of a lime

    I usually shake about a half teaspoon of cayenne into the mix as well, but that's just me.

    Mix it all up really well and let stand overnight (covered) in your refrigerator.

    I've made many salsas the couple years and I still think the Ball Blue Book has a pretty simple one in it that uses green onions instead of regular onions-check it out.
