    Award Winning Bison Recipe

    This recipe won cash in a national burger contest. It is not cheap and challenging for a tailgate, but you could make the chief components ahead and cook the burgers at the tailgate. The chef who devised this delectable delight and gave me the recipe made four of these for me once to try. I do not exaggerate when I say it is simply the best thing I have ever put in my mouth.

    For you gourmets out there, here's the best Bison recipe I know.

    Buttered Pecan Buffalo Burgers with Cabernet Cranberries
    and Herbed Mayonnaise


    1 cup dried cranberries
    2/3 cup Sutter Home Cabernet Sauvignon
    1 stick unsalted butter
    1 cup pecan halves
    1 teaspoon sea salt
    1 1/2 packages (1 1/2 pounds) buffalo burger, thawed
    1/4 cup Tabasco Chipotle Pepper Sauce
    1 teaspoon salt
    2 large garlic cloves, pressed
    1 teaspoon freshly ground tellicherry black peppercorns
    1 egg, slightly beaten
    1 tablespoon avocado oil
    1 cup panko crumbs (or white bread crumbs)
    3 tablespoons vegetable oil
    6 slices Monterey jack cheese
    6 Italian Kaiser rolls
    2 teaspoons Mrs. Dash Steak Grilling Blend
    3/4 cup mayonnaise
    6 red leaf lettuce leaves
    2 California Hass avocados, peeled, cored, and slices
    (Note: Dip in juice from 1 lemon if not served immediately.)

    1. Prepare charcoal grill for medium hot heat.
    2. In a small bowl, combine cranberries and Sutter Home Cabernet Sauvignon. Set aside.
    3. In a small heat-resistant skillet, melt butter on grill. Add pecan halves and salt. Sauté until lightly browned; about 6 minutes. Remove from heat and grind pecans in food processor; set aside. Reserve pecan butter.
    4. In a mixing bowl, lightly combine buffalo, Tabasco, salt, garlic, black pepper, egg, avocado oil, panko crumbs, cranberries and Sutter Home Cabernet Sauvignon, and pecans. Mix together lightly and form into six 3/4-inch thick patties.
    5. Brush vegetable oil on grill rack. Grill burgers with top closed for 4 minutes, turn; add cheese slice to each burger and grill 3 to 4 more minutes until instant-read thermometer reads 160 degrees.
    6. During last 2 minutes of grilling, brush cut side of buns with reserved pecan butter and grill until lightly browned.
    7. In a small bowl, combine Mrs. Dash with mayonnaise. Set aside.


    To serve:
    Place burger on bottom bun, top with lettuce and divided avocado slices. Spread herbed mayonnaise on top half of bun and place bun on avocado. Repeat for other burgers.

    Serve with Sutter Home Cabernet Sauvignon!

    You can get bison meat much cheaper at a local grocery. $10/lb is ridiculous.

    I had a chicken fried bison (buffalo) steak at the Wynkoop Brewery in Denver several years ago. It was extremely tender and tasty.

    Thanks for the recipe swammi! Printed that one off and gave it to the wife. I'm not sure that she wants to put that much effort into cooking for the tailgate, but we'll see!

    I'm sure there is a much cheaper way to get bison. Unfortunately, I can only carry 100 lbs back to my tailgate.
