    Depends on what kind of "hot" you want...

    Do you want the "deep throat burn" hot?
    The "tounge's on fire" hot?
    The "can't feel my lips" hot?

    Personally, Cholula works well in a pinch for me.

    I went to a locker this summer and they have all sorts of spices and sauces. Some of the best I've had are the heavy salt and peppers. Some of the pepers will throw some yang into the flavor.

    My favorite standard sauce that you can buy anywhere is Texas Pete then Louisiana Gold... After that it's a pretty big drop off.

    I have always preferred Louisiana but if you can make your own heres one of my favorite recipes...

    Mango Habanero Hot Sauce :



    1 tablespoon Vegetable Oil
    4 Mangos peeled and diced
    1/4 cup Onion chopped
    1 Dried Habanero Chile
    1/4 cup Lemon Juice
    1/4 cup Ketchup
    3 tablespoons Sugar, Salt and Pepper




    Heat oil in a small saucepan, add mangos, onions, and habanero chile. Cook until onions are soft and translucent. Add lemon juice, ketchup, and sugar, stirring till mixture comes to a boil. Reduce heat and simmer for 30 minutes. Remove from heat, let cool. Blend in blender till smooth consistency. Season with salt and pepper.

    I assume you've tried all the varieties of Tabasco? I like the smoked chipotle when I want something with a ton of flavor (mixed with Ranch dressing is awesome), and the habenero when I want something hot (really good on fried catfish fillets).

    Tapatio, a few friends from Arizona and San Diego brought this stuff back with them to school every time they came back from a break. Best stuff I have ever had hands down, a big fan of the others mentioned but this has a good mix of enough heat and good flavor. I can now find it at the stores around here.

    I dehydrate my habaneros annually and grind 'em up as needed. Throw in half a pepper with a pound of hamburger for nachos or a whole pepper for a pot of chili. mmmm

    The Es Tas house sauce is my favorite. I believe the brand is called Valencia. I've found it from time to time in Hy-Vee.

    Otherwise I stick w/Louisiana Gold, or the thicker chili sauce w/the Rooster on it that you buy at Asian Grocery stores. I have no idea what it's called but it has wicked heat and amazing flavor.

    El Yucateco. It has awesome flavor and just enough burn to make your lips burn for a little while and your nose run a bit. Not too hot but definitely opens up your taste buds.
