    Favorite Spices and Recipes

    What are your favorite spices?

    I grew up with very little spices being used. I am looking for ideas and recipes to increase variety in my cooking. I usually go for mildly spicy food.

    I use cumin with meat a lot. It's that smoky spice most often associated w/mexican food.

    Garlic and Basil are wonderful. I didn't grow up with it much, but use a lot now.

    thai curry paste, yellow for mellow, red is medium and green is mean!

    Mix it with coconut milk and chicken stock. cook some chicken breast in it, add onions, mushrooms and haricot verre (long french style green beans).
    thicken with cornstarch, serve over steamed rice. Awesome stuff!

    I had a roomate in college from Pakistan, and went bananas with the curry. So it probably is more readily associated with Indian food.

    To this day I really can't stand the smell of the stuff.

    Is garlic considered a spice? Can never have too much garlic.
