    Can't miss grilled salmon...

    I saw some discussion on cooking salmon on another thread. It is now my favorite and easiest food to cookout. Here's what I do.
    Buy salmon with skin on. If you are sharing, it's best to buy a big piece and cook it whole rather than two smaller pieces. But either will work.
    I marinate it for 15 or 20 minutes in an Italian dressing, regular or lite works, and any flavor from regular to balsamic.
    Then put you favorite seasoning on it while it marinating. My new favorite is Weber Chicago Steak (Walmart, and it GREAT on everything)
    Put it on the grill with the skin down (I use charcoal)
    Close the lid and check it every 5 or 10 minutes. To see if it's done, take a knife or fork and gently peak into the middle of the fish. It should be slightly pink to be done.
    (Biggest mistake is to overcook salmon) Takes about 10-15 min.
    Take a spachela and go between the skin and meat and it comes off in one piece. The skin stays on the grill, and you simply burn it off now or later.
    This will be the best salmon you've ever eaten.

    I got a question though, how big is the flame? Or is it just resting over hot coals???

    It would be the only salmon I've ever eaten that didn't taste like fish then. I don't really care for fish, even grilled fish. Yech.

    Will probably be the best cooked salmon I've ever eaten, nothing beats Sushi.

    Put it over hot coals. The skin keep the meat from burning and holds in the juices. If you use gas, I'd have it on low. Charcoal is really easy. I could win a cooking contest with it. Really easy. Again, skin side down!

    I've tried, but have overcooked them both times. The really cook fast. They get really dry and tough if you don't get them off soon enough.

    I like my Salmon on a cedar plank. You can find cedar planks at most home improvement stores next to the other grilling supplies. Or go buy a 1"x6" cedar picket for a fence and cut to length.
    Anyway, soak the plank in water for a couple hours. Put your salmon on the plank, skin down. brush a bit of olive oil over it, followed by a bit of kosher salt, pepper, and a layer of brown sugar.
    Throw it on the grill for about 20 minutes. The cedar will char on the bottom, but the salmon will pick up a nice hint of the cedar smoke and the brown sugar will carmelize for a nice glaze on top.
    Best salmon I've ever had. (including sushi)

    Typing that just made me really hungry.

    Tuna steaks are the greatest thing in the world if done correctly (IMHO). Keep the heat down. Any chef in the country will serve a tuna steak rare-medium rare. I like to give it a little citrus boost (lime, etc). I think of a tuna steak the same way I think of a filet when I am grilling it. Do not overcook.
