    Healthy Recipes

    Looking for some new recipes to add to the repertoire. I've been very good about eating healthy the last year or so, but the old standard of spinach salad with a different protein for lunch is still tasty, just looking for some new stuff.
    Started making edamame succotash a few months back and it is very good, makes a good filling for a tortilla as well
    Saute' in olive oil an onion, couple cloves of garlic, and a diced green and red pepper.
    Add a bag of cooked edamame, some red wine vinegar, and a bag of corn. Salt and pepper to taste
    Very good and near as I can tell quite healthy.
    What other things do you guys have?

    • One of my faves.
    • Lentil Soup




    • 2 tablespoons olive oil, plus extra for drizzling
    • 1 medium onion, chopped
    • 2 carrots, peeled and chopped
    • 2 celery stalks, chopped
    • 2 garlic cloves, chopped
    • Salt and freshly ground black pepper
    • 1 (14 1/2-ounce) can diced tomatoes
    • 1 pound lentils (approximately 1 1/4 cups)
    • 11 cups low-salt chicken broth
    • 4 to 6 fresh thyme sprigs

    Directions

    Heat the oil in a heavy large pot over medium heat. Add the onion, carrots, and celery. Add the garlic, salt, and pepper and saute until all the vegetables are tender, about 5 to 8 minutes. Add the tomatoes with their juices. Simmer until the juices evaporate a little and the tomatoes break down, stirring occasionally, about 8 minutes. Add the lentils and mix to coat. Add the broth and stir. Add the thyme sprigs. Bring to a boil over high heat. Cover and simmer over low heat until the lentils are almost tender, about 30 minutes.
    Season with salt and pepper, to taste.

    I'm trying to do the same :)

    A couple good ones we use are stir-fry with tons of veggies and chicken, and shrimp fajitas, again with lots of veggies.

    Shrimp Fajitas | Skinnytaste For two of us, we do two onions, 3-4 peppers, and enough shrimp to do 4 per fajita. We have it for leftovers for a couple lunches.

    We use whatever veggies - peppers, onion, carrots, and usually a bag of stir-fry mix from the store. Regular oil, brown sugar instead of white, and 14oz of chicken stock. Add salt or other spices you want at the end.

    I've been kind of on a gazpacho kick lately. For those who don't know it's a cold soup. This is one of my favorite recipes.

    See thread on Subway sandwiches. You can get healthy options and as a way of controlling portion size, your sandwich will not be as big as advertised!
