    Re: Wood for smoking

Most grocery stores or home improvement stores carry bags of wood chunks. It's bigger than chips and some of them can be near the size of your fist. One of these days I'd like to find some peach wood to try as I hear it gives a nice flavor. I mostly use hickory though.

    Re: Wood for smoking

While I have some fellow smokers in the room, How much hotter does lump actually burn and does it last longer or shorter than charcoal. I have 10 lbs of coals hold 230 degrees for 12 hours in my Ugly Drum Smoker. I've always wanted to try lump, but I'm afraid of change and losing control of my temp.

I have a Weber smokey mountain and usually use 1 chimney of unlit, 1 chimney of lit, then 5-6 fist of wood chips. Generally use twice as much fruit wood as hard woods.
