Agricultural Economics and Abnormal Psychology were both fairly easy when I took them. However, that was a decade ago, so I couldn't tell you if they're still easy or not.

My advice is find something that you would actually enjoy and challenge yourself. You'll actually get something out of it this way. You may appreciate it later in life when half of your paycheck goes to paying off your loans ;)
I'd say any history course, but I love history. Hollander teaches 403(Roman Civ) and 402(Greek Civ). They say 400 but compared to most other majors are like 100 level courses. I enjoyed Roman Civ greatly.
Music 304. History of Rock'n'Roll. It's not extremely easy to get an A because of the stupid quizzes, but the effort required to get a good grade is very little. you just have to go to class and pay attention. very little work outside of class
ComSt 301. I'm taking it right now. Test are somewhat difficult (I have gotten a 72 and a 92 on first two) but see grades any written assignments extremely easy. If you study hard it's an easy A. If you don't study that much, like me, easy B.
