    I'm all for mom and pop businesses, but these people are just making a mountain out of a mole hill. To say that this change would cost thousands of dollars and force them out of business is disingenuous, at the very least. If you're really the mom and pop operation you say you are, get a couple customers to donate some crock pots to store your cooked meat at the proper temperature. Problem solved.

    I'm not sure if you're familiar with this particular restaurant but it is pretty famous/infamous for being set in its ways. I haven't even been there and I've heard of it. For one, they will not allow you to use ketchup in their restaurant and make fun of you if you ask for it. According to them a Maid-Rite becomes a sloppy joe if you add ketchup. With that attitude, it's no wonder they are fighting any changes to death. If they change their cooking method, they probably wouldn't even call their own sandwiches Maid-Rites.

    This seems obviously unsafe - how in the world can you cook raw ground beef in the same pan as cooked beef?
    That being said, if there is such a risk of cross-contamination, why wouldn't the restaurant have had to correct the problem immediately after inspectors discovered the practice? Yet they are still cooking it the same way today! What kind of "enforcement" is that?
    Sounds like it can't be that dangerous after all...

    If being set in their ways causes them to not be able to compete fairly (legally), then they deserve to go out of business.

    I could be wrong, but it sounds like they cook the meat for the maid-rites and then store it in the same pan that had uncooked meat in it until they serve it.

    If I recall correctly, they have a big cooking tub. They will throw the raw burger mix into it and stir and heat it until it is done. They they serve out of that tub.

    When more meat is needed they throw the raw burger mix in one of end of the tub and stir it in until it's cooked. In the meantime they serve maidrites out of the opposite end of the tub. So it would seem very conceivable that some contamination of uncooked juices/meat could migrate into someone's sandwich.

    Getting another tub is not something they want to do. Cost and space considerations.

    Many years ago in the 1990's the owner of the MaidRite in Marshalltown
    bushed my Company out of a small amount of money around a 100.00. When contacted he basically told me to go F)**^*$** myself when I attempted to get it right. IF the current owner is the same owner that pulled this stunt 15 or so years ago, then the same to you and I hope your problems continue.You reap what you sow! I couldn't be happier for you! IB
