    Smoker Recipes?

I need a little help here, folks. I just got an Oklahoma Joe's Smoker, and need some input on some good recipes. I'm a pretty big amateur right now, and have only smoked burgers, steaks, and a beer can chicken, but would really like to get some good things going.

Anybody have any great smoking recipes they would like to share? I would like to have a few good ones ready to go for the big game this weekend... I'm having a lot of people over and would like to show off my skills.

Smoked steak? First I have heard of doing that.

    Here are some good ones:

Oklahoma Joe's Smoked Brisket Flat Recipe : : Food Network

    Turkey in a Smoker Recipe - Allrecipes.com

I have done both of these and highly recommend them. Use Apple smoke chips on the Turkey recipe.

    Re: Smoker Recipes?

In all honesty smoking meat takes some expirimenting before you get a flavor you really like. I've tried so many different things and found making a good rub is the big key. I can't find the exact recipe at the moment but so far my favorite has been the pork shoulder I used some kind of Carolina rub recipe for for pulled pork. Depends on if you want a sweet taste or something with a little bite to it too. I smoke using hickory but if you want something sweeter make a rub with more brown sugar to it and use something like mesquite or apple wood to smoke.

Sweet... thanks. Smoked steaks is something my dad has always done, probably just as an experiment. Turned out pretty good, although not really much different than grilling over charcoal.

Also, not sure if anyone got these flyers Thursday but I am considering putting an entry in:

    http://www.iowapork.org/Portals/iowa...te%20Flyer.pdf

You don't even have to do anything difficult, they have a category for pork burgers and brats too.

    Re: Smoker Recipes?

I made some beef short ribs over the weekend. First attempt at those...pretty tasty.

Always like the brisket, pork shoulders, chicken, etc. Whoever said experimentation is key is spot on. First couple of briskets, not so good, but once you get the hand of it darn tasty.

Grab a Tri-Tip. It's unusual for Iowa, but you can find it at Sam's / Costco.

    Re: Smoker Recipes?

i use the angel dust recipe for smoking pork and beef from this book...Peace, Love, And Barbecue - Home
there are all sorts of recipes on beans, potato salad, slaw, cobbler etc. and tons of bbq lore.

i have also used this recipe about five years ago for smoking some king salmon... Salmon - Brown Sugar Rub - The Virtual Weber Bullet ...and it was really sweet, but soooo awesomely delicious! its also a great site for tips tricks and information about smoking meats and bbq
