Legit, when I make lasagna, I use home-made ricotta. It's so fatty and delicious. Store bought? Give me that pepper jack or havarti (on a lunchmeat sandwich), fo sho.
My favorite is deep fried at the MN State Fair.

Pepper jack, sharp cheddar, and deli-sliced yellow American. And for my Italian half, provolone, mozzarella, and ricotta (which most of the time IS worth me popping the lactase pills).
Big fan of mozzarella. Anybody try head cheese before? I hear it's awful.

gorgonzola= radioactive band aids
good cheeses=cheddar, swiss, colby, asiago, et al.
Cheese makes everything better.
All kinds are great.
Most find it disgusting, but I love limburger on toast with butter and honey mustard.
